Who doesn't love a nice roast beef?! Unless you are a large household, using the main oven to roast a small joint of beef not only takes a while for it to pre-heat and get up to temperature but it's also using a lot of energy to do so (and energy prices are not cheap right now) so what's the answer? Use an Air Fryer of course!
There's nothing magical about an air fryer, they are just badly named as there is no frying going on in most of them in any way, shape or form - put simply, most of them are an energy efficient (due to their size and insulation properties) small electric fan oven suitable for cooking smaller items.

Ingredients
- Beef Joint
- 2 Onions (peeled and halved)
- Oil
- Salt

- Air Fryer
- Tin Foil
- Chopping Board
- Carving Knife
Instructions
- Bring the beef joint up to room temperature for at least 30 minutes after removing from the fridge but no longer than 90 minutes
- Put the onion halves in some tin foil

- Put a little oil in a pan on a medium-high heat
- Sear each side of the joint for around 1 minute each side

- Place the beef joint on top of the onions and wrap in the foil

- Put the meat in the air fryer

- Check the instructions on the packet for the correct timings - 6.5 minutes per 100g for a Medium roasted joint is what mine says so around 45 minutes for the 700g joint I'm using in this example
- Roast at 180° for the specified time
- Remove from the air fryer and check it has been cooked to your liking (this is where a meat thermometer comes in handy) and cook for more time if not quite done enough.
- Now the meat needs to remain wrapped in tin foil and wrest outside of the air fryer on a chopping board with a tea towel on top of it
- You can either serve the scrumptious onions with all the meat juices in them on the side of the plate, or before you let the meat rest you can remove them to help make the most amazing gravy!

- Let the meat rest for at least 20 minutes (it's at this point I cook the vegetables I'm having and make my gravy)
- Carve, sneak a quick taste (chef's perk), serve with gravy and vegetables of your choosing.
