Carrot and Coriander Soup Recipe Ninja Foodi


Portions: 4


Ingredients

  • Carrots
  • Onion
  • Potatoes (just a handful to help thicken the soup)
  • Coriander
  • Vegetable stock
  • Oil
  • Salt and Pepper
  • Cornflour/water mix (if not thick enough)
  • Cream (optional but takes it to another level in my oppinion)
I have purposely not given quantities of the vegetables as making a soup is a fantastic way of using whatever leftover veggies you have in your fridge so everyone will have a different amount and as long as you use less potatoes than carrots (around 1/3 potatoes to 2/3 carrots is what I would recommend) then that way you wont lose the carroty taste!



Equipment

  • Knife
  • Chopping Board
  • Ninja Foodi
  • Ninja Foodi Pressure Cooker Lid
  • Wooden Spoon
  • Jug for the Stock
  • Hand Blender

Instructions

  1. Dice all of the vegetables (Carrots, Onion and Potatoes)

  2. Add some oil to your pot and put on a very hight heat



  3. Add all the diced veg to the pot and stir!



  4. Keep stirring until the onion has softened and started to change colour

  5. Pour in enough stock to cover the vegetables



  6. Sprinkle in a good helping of coriander and then give it a good stir



  7. Put on the Pressure Cooker lid and Pressure Cook on High for 7 minutes



  8. Turn off the Ninja Foodi and release the pressure to reveal the most delicious smelling soup!



  9. Turn off the Ninja Foodi and plug in your Hand Blender and blend, blend, blend!



  10. When the soup is nice and smooth give it a taste and season with salt and pepper to taste



  11. If the soup is too thick then you an stir in a little more stock or if it's not thick enough for you then you can add a little cornflour/water mix in to the soup to thicken it up to your liking.

Serving Suggestion(s)

Great on it's own or it goes very well with some fresh crusty bread or French Stick!


Although it tastes AMAZING as it is, I personally like to take it to the next level and stir in a little cream:




Chinese Style Hot and Sour Soup

Very nice but next time I make this I think I'll not bother with the prawns as they didn't really add anything to the dish for me.  Very hot though - took me ages to drink/eat it!!
