An American staple since the 1870s the meatloaf is simple and easy to make and when done well, very tasty!

Ingredients
For the Meatloaf:
- 500g minced meat (most commonly minced beef but can be any you like)
- 1 large egg
- 2 tbs Tomato Ketchup
- 1 tbs Worcestershire sauce
- 1 tsp dijon mustard
- 2 cloves garlic or 3/4 teaspoons garlic powder)
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/2 tsp dried sage
- 1/4 cup diced onion
- 1/4 cup panko breadcrumbs
Meatloaf sauce:
- 1/4 cup ketchup
- 3 Tablespoons light brown sugar
- 1 teaspoons dijon mustard
- 1/8 teaspoon ground nutmeg
Equipment
- Pressure Cooker (and wire rack if it came with one etc)
- Mixing Bowls
- Wooden Spoons
- Tin foil
Instructions
- Peel the potatoes and cut in to quarters and then place them in the bottom of the pressure cooker pot

- Pour cold water over the potatoes and add some salt
- Place your pressure cooker rack in the pressure cooker over the potatoes

- In a mixing bowl, mix together all of the meatloaf ingredients

- Place a square piece of tin foil on your worktop that is roughly the size of the width of your pressure cooker
- Using the meatloaf mixture, form a loaf that will fit in to your pressure cookers pot

- Wrap the tinfoil around the edge of the loaf so no juices escape during cooking

- Place the loaf in the pressure cooker on top of the wire rack

- Cook on High for 25 minutes and let the pressure release naturally for at least 10 minutes

- Whilst the meatloaf is cooking, mix all the sauce ingredients together in a bowl and then put to one side

- Remove the meatloaf from the pressure cooker and cover with tinfoil to keep it warm

- Drain the water from the pressure cooker but leave the potatoes in it

- Add butter to the potatoes and mash them

- Remove the meatloaf from the foil and place on a serving plate (any juices can be used in making a gravy should you so choose) and pour over the sauce you made earlier
- Slice and serve!
