Homemade cheesy leeks are simple to make and nice and quick too! If you don't want to make your own Cheese Sauce from scratch (it's only around 4 ingredients) then you can always make it from a pot/tub like you can with gravy.

Ingredients
- Leeks
- Cheese Sauce
- Dijon Mustard (optional but a little dash is a game changer)!
Equipment
- Chopping Board
- Knife
- Saucepan
Instructions
- Wash the leeks under a tap
- Chop them up

- Add to the saucepan and cover in cold water

- Bring to the boil and then simmer for 2-3 minutes (if you're not having any cheese sauce then simmer for 3-4 minutes and then drain and serve)

- While you are waiting for the water to boil make the cheese sauce and then set to one side
- After the 2-3 minutes are up and to the cheese sauce and give it a gentle stir and ensure all the leeks get covered

- Add a dash of Dijon Mustard (a little dab will do you (as Delboy once said)) to elevate this side dish to another level - I'm not a big mustard fan but a tiny bit of Dijon Mustard really elevates this side dish
