Traditional London Bubble and Squeak Recipe

Forget the Bubble and Squeak ready meals you can get in some Supermarkets, real Bubble and Squeak is simply leftover Roast Beef Dinner fried up the next day!

Originally (in the mid 1700's - 1753 to be precise), Bubble and Squeak was made with leftover roast beef, cabbage and onion with not a single potato in sight!  The thin slices of cold beef were fried first and then the cabbage was added which created a bubbling and squeaking noise.

Then in the 1880's a recipe came along that recommended using mashed potato, cabbage, salt & pepper and slices of beef in the center.

Ingredients

  • Leftover roast beef (thinly sliced)
  • Leftover roast dinner vegetables
  • Butter
  • Gravy

Equipment

  • Frying Pan
  • Tin Foil

Instructions

  1. Gently melt some butter in a frying pan and then add some of the thinly sliced leftover beef and heat up until the edges are slightly crispy

  2. Remove the heated up beef from the pan wrap in tin foil to keep warm.

  3. Add some more butter to the pan and on a medium to moderate heat add any leftover vegetables to the pan (mashed potatoes, roast potatoes (mashed up), cabbage, carrots, swede, turnip, Brussel sprouts, parsnips etc) and gently fry - turn with a spatula, a bit like you're cooking a stir-fry!

  4. When there is a gentle crisp to the potatoes etc. serve with the heated up beef that was keeping warm in the tin foil.

Serving Suggestion(s)

Eat as is or serve with a fried egg and/or gravy on the side!
