Baked Whole Onions for Two

I've said it before and I'll say it again - the humble onion is one of the most underrated vegetables there is and baking/roasting them in the oven is one of the many ways you can enjoy an onion either on its own or as part of a meal.

Ingredients

  • 1 Large Onions
  • Butter (1tsp per onion)
  • Salt and Pepper
  • Herbs (Rosemary, Thyme and Sage are good choices)
  • Bay Leaves
  • Balsamic Vinegar

Equipment

  • Baking Tray
  • Chopping Board
  • Knife

Mise en Place

Instructions

  1. Leave the papery skin on and then trim both ends of the onion
  2. Place in a baking tray
  3. Season both ends with Salt
  4. Place under a Grill until the onions start to caramelise
  5. Remove from the grill and Place a teaspoon of butter on top of each onion
  6. Sprinkle your herbs over the butter and add a couple of bay leaves to the tray
  7. Cover the backing tray with tinfoil
  8. Bake at 200C° for 60-90 minutes
  9. Spoon over the butter
  10. Serve with or without the outer layer with the papery skin on - but don't eat the papery skin (it wont hurt you if you do, but it's purpose is to keep the juices in the onion whilst cooking).
Optional - add a drizzle of Balsamic Vinegar before removing from the tray for that extra zing of flavour!


Serving Suggestion(s)

Serve with mashed potatoes and vegetables - or it goes great with a roast dinner!
