Ingredients
- 1 TBSP Olive Oil
- 1/2 Onion Finely Chopped
- 1/2 Clove of Garlic
- 1/2 TSP Tomato Puree
- 1/4 TSP Oregano
- 2 Large Flat Mushrooms
- Salami
- 1 1/2 Tomatoes (Sliced)
- Sliced Mozzarella
- 1 TBSP Grated Cheddar Cheese
- Salt and Pepper
Instructions
- Put the Olive Oil, Onion and Garlic in to a frying pan and cook slowly for around 5 minutes until the onion is soft
- Add the Tomato Puree and Oregano and give it a good mix
- Turn off the heat and oil a baking tray
- Place the Large Flat Mushrooms on the Oiled Baking Tray and season the mushrooms well with salt and pepper (trust me, this simple step really enhances the flavour of the mushroom).
- Spoon the Onion Mix in to the Mushrooms
- Top with slices of Salami, Tomato and Mozzarella
- Season with Salt and Pepper to taste
- Sprinkle on the Cheddar Cheese
- Place in the Oven at 200ยบ for around 15 minutes or until the cheese has melted and the mushrooms are juicy!

I think this would go very well with some Glamorgan Sausages (not yet shown in the photos)...
