Prawn Crackers - Chinese TakeAway Style

We always get Prawn Crackers when ordering a Chinese TakeAway - but they're not actually Chinese.  They're more Vietnamese than Chinese!

You can buy uncooked prawn crackers from most Asian/Oriental/Chinese supermarkets (I get mine from here in Northampton) or you can even buy them from places like eBay or Amazon...


Portions: 1-100 the more you cook, the more you'll have to eat!


Ingredients

  • Groundnut Oil (or Vegetable Oil)
  • Uncooked Prawn Crackers

Equipment

  • Wok or Saucepan deep enough to fry the crackers in (need approx 5cm (2") deep oil)
  • Something to safely remove the cooked prawn crackers from the wok/pan
  • Plate or bowl with kitchen roll on it to soak up any dripping oil

Instructions

  1. Heat up the oil to around 180°
  2. Place a few of the prawn crackers at a time in to the hot oil
     


  3. Wait for them to expand and then flip them over


  4. Remove them from the pan and place in a bowl or a plate lined with kitchen roll
  5. Wait for them to cool before eating else they will be chewy!

Serving Suggestion(s)

Serve with any Chinese TakeAway style meal or enjoy on their own!



Flash Spray Wipe Done (Kitchen) Review - SuperSavvyMe

I normally just use a sponge with some washing up liquid and water on it for cleaning my kitchen work top and electric hob but I have been sent some free Flash Spray Wipe Done Kitchen from SuperSavvyMe so time to give it a go!

I have purposely not cleaned my hob for a few days:


It would be unfair to test it whilst the hob is in this state so before I sprayed it all the hob and surrounding work surface I removed all the loose bits...


Step 1: Spray!


Step 2: Wipe!


Step 3: Done!


When I use the Bathroom version of Flash Spray Wipe Done, in my experience it gets rid of all the grime and leaves it sparkly clean, whereas (for me) although it has left my work surface sparkly clean, there are still some marks (that don't get removed with my old method either) so that's why I've not given it the full 5 stars - if it got rid of the marks/stains on my hob then that would be amazing and it would have had 5 and not the 4.5 I have given it.

Sweet and Sour Chicken Balls - Chinese Takeaway Style


Portions: 1-2


Ingredients

For the Chicken Balls:

  • 65g of Plain Flour
  • 1 tsp baking soda powder
  • 1/2 tsp salt
  • 1 eggs
  • 80ml semi-skimmed milk
  • 1/2 tbsp groundnut oil
  • 2 chicken breast fillets chopped in to suitable size pieces (around 2.5cm square should do)

For the Sweet and Sour Sauce:
  • 120ml orange juice
  • 1.5 tbsp sugar
  • 1/2 tbsp tomato puree
  • 1/2 tbsp tomato ketchup
  • 1.5 tbsp white wine vinegar
  • 1.5 tbsp cornflour mixed with 3 tbsp water
For Frying:
  • Enough Groundnut oil to put in a deep pan or wok so that the chicken balls will not touch the bottom
If you do not have (or cannot afford) enough of the groundnut oil to fry them in then use a flavourless oil like sunflower or vegetable oil instead.

Tip: in the oil section of the supermarkets here in the UK is where a lot of people buy a small 500ml bottle of groundnut oil for around £2.50 (that's around £5 per litre) whereas if you look in the World Foods aisle you can often find a 1litre bottle for around £4 so a 20% saving if you use that much oil...

Equipment

  • Mixing Bowl
  • Saucepan form making the sauce
  • Pan of oil for frying the balls in

Instructions

  1. Make the sauce by bunging all the ingredients (apart from the cornflour mix) in to a saucepan over a medium heat and bring to the boil.


  2. Once boiling reduce the heat to simmer for 5 minutes.
  3. Carefully pour a bit of the cornflour mix and give it a good stir.  Keep stirring and bit by bit add the rest of the cornflour and don't stop stirring!


  4. Once it's the right thickness take it off the heat and put to one side...
  5. Put the flour, baking powder and salt in a bowl and mix it all together


  6. In a small bowl or dish, beat the egg, milk and 1/2 tbsp groundnut oil together


  7. Pour the beaten egg mix in to the flour mix and mix all together to make a smooth thick paste
  8. Add the chopped up chicken to the batter and mix well ensuring every part of the chicken is covered


  9. Heat the oil to 170° in a suitable deep pan or wok - make sure there is enough oil so that the chicken balls do not touch the bottom
  10. Carefully place the chicken in to the oil one at a time (to avoid any splashing)


  11. Fry the balls in small batches for 5-6 minutes at a time
  12. If you have a food thermometer then they should reach an internal temperature of 78°


  13. Place the cooked chicken balls on a plate that has some kitchen paper on it

Serving Suggestion(s)

Serve with the sweet and sour dipping sauce you made earlier and it goes very well with some home made Egg Fried Rice and some Prawn Crackers!



Egg Fried Rice - Chinese Takeaway Style


Portions: 1-2


Ingredients

  • 250g(ish) of cold rice
  • 1 tbsp groundnut oil
  • Salt
  • 1 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 2 eggs (beaten)

OPTIONAL EXTRAS

For extra flavour consider adding any (or all) of the following:
  • Chopped Scallions (Spring Onions)
  • Shredded Chicken
  • Prawns
  • Bamboo Shoots
  • Peas
  • Shredded Pork
  • Sliced Mushrooms
I particularly like adding chopped spring onions and sliced mushrooms.  By adding prawns, chicken and prawns etc. you have now made Special Fried Rice!

Equipment

  • Wok or large frying pan
  • Sharp Knife
  • Chopping Board
  • Spatula or wooden spoon

Instructions

  1. Heat the oil on a high temperature in Wok or suitable large frying pan - if when you add the rice it doesn't try to pop out of the pan on to your work surface, your oil is not hot enough!


  2. When the oil is very hot, carefully pour in the beaten eggs and constantly stir in the oil very well


  3. Add the cold rice and continue to stir, stab and mix in to the egg and oil that is already in there - continue cooking for 2 minutes


  4. Add a pinch of salt and continue to stir/mix
  5. Add the soy sauce and oyster sauce and continue to stir/mix


  6. Add any of the additional ingredients listed above that you like and mix them in until they are hot


  7. Serve and enjoy!

They go very well with some homemade Sweet and Sour Chicken Balls (even if I do say so myself)!



Flash Spray Wipe Done (Bathroom) Review - SuperSavvyMe

I have purposely not cleaned my bathroom sink this week as I have been waiting for my free Flash Spray Wipe Done bottles from SuperSavvyMe to turn up...

BEFORE:


All you have to do is spray it on, wipe it off with a microfiber cloth and your done!  If you want to disinfect it properly too then you need to wait 5 minutes or so between spraying and wiping.



AFTER:


Another AFTER with the camera Flash turned on (pun intended)!


Simple, quick, easy to use and it works.  What more is there to say other than that I may have been sent this one for free from SuperSavvyMe but the two below are ones I purchased last year and use them all the time:


Overall I am very pleased with the Flash Spray Wipe Done that I have been sent and use them all the time as like I have said above, it's simple and it just works leaving everything sparkly clean.  A very easy 5 stars as I've never had a problem in all the time I have been using this product.

Homemade Liver and Bacon with Onions Recipe


Portions: Two


Ingredients

  • 225g Lambs Liver
  • 2 TSP Plain Flour
  • 40g Butter
  • 1 Medium Onion
  • 3 Slices of Bacon chopped up in approx. 2cm squares
  • 250ml Beef Stock
  • 1 Squeeze of Tomato Puree
  • Salt and Pepper
  • Gravy Browning
  • Mashed Pototoes


Instructions

  1. Rinse the live under a cold tap (I use a sieve so you don't lose any down the sink)


  2. Dry the rinsed liver with some kitchen towel and put to one side in a bowl
  3. If not already sliced, slice the liver in to strips and trim off any bits you don't want
  4. Put the flour in a bowl and add a sprinkling of salt and pepper and give it a stir


  5. Add the sliced liver to the flour mix and lightly coat it


  6. Melt half of the butter in a frying pan and add the liver (ensure you tap off any excess flour as you'll need this later)


  7. Fry the liver for 1-2 minutes a side and then place on a plate for later
  8. Add the rest of the butter to the frying pan
  9. Add in the onion and gently fry until golden and soft


  10. Add the chopped up bacon to the pan and gently fry for around 5 minutes (we're looking for soft bacon not crispy)


  11. Pour in the hot stock and bring to a simmer


  12. Add a squirt of tomato puree
  13. When the stock has turned in to a thick gravy add a (very) tiny amount of gravy browning



  14. Now add the liver and cook gently for 2-3 minutes until it's nice and hot


Serving Suggestion(s)

Liver and Bacon with Onions goes fantastically well with simple mashed potato but I had some frozen Rumbledethumps in the freezer so I cooked that in the microwave and served it with that!
