Easy Quick Pepper(corn) and Mushroom Sauce for Steak

Once you've cooked your steak to perfection you need to let it rest before cutting/eating it - so what do you do whilst you're waiting?  Make a quick, simple and delicious sauce of course!!

I love a peppercorn sauce (and I don't know about you) but I don't always have cream in the fridge or some fancy shallots in the cupboard or some brandy on hand to add just a dribble to a sauce let alone some actual peppercorns!


What I do tend to have is more basic ingredients like butter, flour, milk, stock cubes and a pepper grinder..

Other than the flour and butter, I've not given any other precise measurements as it's all down to your own taste and how much sauce you actually want to make - it could be just for you or you may be cooking for 2, 3 or more - adjust it to what you need.

Ingredients

  • 15g butter
  • 15g flour
  • Beef Stock (OXO Stock Cubes etc)
  • Milk
  • Black Pepper
  • Mushrooms

Equipment

  • Saucepan
  • Wooden Spoon
  • Chopping Board
  • Knife
  • Whisk

Instructions

  1. Remove the steak from your pan, wrap in foil and leave to rest



  2. Add some butter to the frying pan and deglaze the pan using a wooden spoon etc.
  3. Add some chopped mushrooms to the pan and cook/stir on a moderate heat
  4. Melt some butter in a saucepan
  5. Mix in the flour to the melted butter and cook for a couple of minutes so you can't taste the flour any more (this is also known as a Beurre manié)
  6. Pour in a little bit of the stock at a time and give it a good whisk
  7. To give it that creamy taste whisk in a little milk
  8. Give it a taste to see if it's creamy enough for you
  9. Make sure you keep an eye on the mushrooms...
  10. Add generous amount of cracked black pepper
  11. Simmer the sauce until it is to a thick consistency that you like and then add the mushrooms
  12. Stir in the mushrooms and make sure you pour in all the liquid/flavour from the frying pan and use a wooden spoon to gently scrape the bottom of the pan if required so you get all the juicy steak flavour in to your sauce!
  13. Taste the sauce and add more pepper if required - if too peppery then add more beef stock and milk and then simmer for a but until it's just right!




Serving Suggestion(s)

Serve with steak or chicken and triple cooked chips!
