DUNNS RIVER Chicken Fry Mix - Wings Recipe

Who doesn't love crispy, crunchy, succulent and juicy chicken wings?!  They go great with chips and coleslaw (even if I do say so myself)!

Ingredients

  • Chicken Wings
  • DUNN'S RIVER Chicken Fry Mix

Equipment

  • Bowl
  • Wire Rack
  • Deep Fat Frier
  • Oven

Instructions

  1. Prepare your chicken wings (cut off the tips if they have them)
  2. Do not pat them dry, just leave them as they come
  3. Place them in a bowl
  4. Add a healthy amount of the Chicken Fry Mix - when you think they are nicely coated (and there is no mix left in the bowl) add a bit more and give the wings a thorough mix!  The more of the mix you get on the wings, the tastier they will be!



  5. Place the wire rack in your oven at 120°C
  6. Deep fry for at 175°C 12 minutes until golden brown



  7. Remove from the fryer and place in the oven on the rack for around 15 minutes



  8. Serve and enjoy!
IMPORTANT: Step 7 is a game changer for maintaining the crispiness of the wings, it's what KFC does to all of it's chicken that comes out of their pressure fryers, they go on a rack in an oven for a while before being transferred to the racks in the display that you see when you walk in to one of their restaurants.

Serving Suggestion(s)

Serve with triple cook chips and homemade coleslaw - or eat them on their own as a snack!
