Who doesn't love a homemade kebab? I know I do! This recipe takes the mix for a Kofta Kebab and instead of making a kebab with it, you form the mixture in to meatballs and bake in the oven for a quick, easy and tasty meal!

Ingredients
- 250g Minced Lamb
- ¼ Onion grated
- 1 Onion (chopped in to large chunks)
- 8g Panko Breadcrumbs
- 1 tsp Garlic
- 1 tsp Coriander
- 1 tsp Paprika
- ½ tsp Ground Cinnamon
- ¼ tsp Cayenne Pepper
- ¼ tsp Salt
- ¼ tsp Black Pepper
- 1 Bell Pepper
- Oil Spray
- Salt and Pepper (to taste) for the vegetables
Equipment
- Large Tray
- Chopping Board
- Knife
- Mixing Bowl
Mise en Place

Instructions
- Turn your Fan Assisted oven on at 180°C
- Place all of the following ingredients in to a bowl and mix them together:
- Minced Lamb
- Grated Onion
- Panko Breadcrumbs
- All of the spices (Garlic, Coriander, Paprika, Ground Cinnamon, Cayenned Pepper, Salt and Black Pepper)
- Spread the Sliced Bell Pepper and Diced Onion on the Baking Tray and sprinkle with Salt and Pepper (to your taste)
- Form the Kofta Meatball mixture in to approximately 8 meatballs and place them on the Baking Tray amongst the Peppers and Onion
- Spray the Meatballs, Peppers and Onion with a little oil
- Bake in the oven at 180°C for 10-15 minutes
- Turn over the Meatballs (and give the Peppers and Onion a good mix whilst you're at it)
- Spray the meatballs with a little oil
- Return to the oven and bake for a further 10-15 minutes
- Serve and enjoy!
Serving Suggestion(s)
Serve with flatbreads (or pitta-breads), tzatziki or lemon yoghurt sauce and some salad. This even goes very well with some rice or couscous.
