Campfire Stew Pressure Cooker Recipe


Portions: 4-6


Ingredients

  • 1 gammon joint or Pork Joint or Beef Joint (all fat removed)
  • 100ml of water or stock
  • 2 large onions (chopped)
  • 2 large carrots (diced)
  • 1 stick celery (chopped)
  • 3 cloves garlic crushed
  • 3 bell peppers sliced (put half of the peppers to one side)
  • Half a dozen mushrooms cut in half
  • 400g tin chopped tomatoes
  • 400g tin kidney beans drained and rinsed
  • 400g tin baked beans
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 pinch chilli flakes
  • 2 tbsp tomato puree
  • 1 tbsp Worcestershire sauce (if you must but I'm not a big fan)
  • 1 dash Hot Sauce



Equipment

  • Pressure Cooker
  • Chopping Board
  • Knife

Instructions

  1. Saute the onions



  2. Add all of the ingredients (except the meat) to the pot (don't forget to keep half of the peppers to one side) and give it a good stir

     

  3. Place the joint of meat in the middle (I didn't have a joint of beef but I did have the equivalent weight in steaks I got cheap from the Company Shop so I used those instead)



  4. Pressure cook for 40 minutes on high
  5. Let the pressure release naturally
  6. Remove the meat and shred



  7. Add the rest of the peppers



  8. Add the shredded meat back to the pot and give it a good stir



  9. Pressure cook for a further 10 minutes
  10. Let the pressure release naturally
  11. Serve and enjoy!

Serving Suggestion(s)

Serve with potatoes or rice or a slice of bread and butter or simply enjoy on its own!
